Chocolate Pudding from Australia

Pudding from Down Under. This was a real hit with our family.
The surprising result is a chocolate bread pudding complete
with it's own chocolate sauce. Yummy!

Pudding:

  • 2 oz (4 T) butter
  • 1/2 cup sugar
  • 1 egg
  • 1 cup self-rising flour
  • 1 T cocoa
  • 1/2 cup milk
  • 1/2 teaspoon vanilla
  • Sauce: (double if you want more sauce--we recommend it!)

  • 1/2 extra cup sugar
  • 1 T extra cocoa
  • 1 1/2 cups hot water
  • Directions:

    Cream butter with sugar and vanilla until light and fluffy. Add egg, beat well.
    Fold in sifted flour and cocoa alternately with milk.

    Place mixture into greased ovenproof dish (you will need a dish at least 9"
    in diameter and 4" deep). Sift over combined extra sugar and cocoa. Pour
    hot water over gently.

    Bake in 350 degree oven for 35 to 45 minutes. Serve hot with vanilla ice cream
    or cool to room temperature. Serves 4 to 6.
